90% Carricante, 10% Catarratto grapes from 30 to 120-year-old vines in Contrada Santo Spirito, Passopisciaro on the northern slopes of Mt Etna, Sicily at 680-750 m above sea level

10 months in stainless steel in contact with the fine lees and eight months in the bottle.

It is a lemon colour with a complex bouquet of white flowers, citrus fruit, saffron, honey, aromatic herbs, and hydrocarbon notes. It is an elegant wine with lovely persistence and freshness.

Enjoy it with smoked salmon, seafood pasta, saffron risotto, seafood, and fish dishes.

Cellaring potential: 6 - 8 years

The Palmento Costanzo estate is located in the town of Contrada Santo Spirito, Passopisciaro on the northern slopes of Mt Etna.

Founded by husband and wife Mimmo and Valeria Costanzo in 2011, the name “Palmento” derives from the 19th century 'palmento' grape stone press which they have painstakingly restored.

14 hectares of terraced vineyards with nutrient-rich, brown volcanic sands grow at elevations ranging from 680 to 800 metres, and farming is carried out organically. 

Vines vary in age from 5-30 years old for the fresher, younger Mofete range and up to 120 years for the pre-phylloxera vines.
