Area of origin:
Clayey - limey soils from the Salento area (Lecce, Brindisi and Taranto provinces).

Vinification:
Classic red wine process, with prolonged contact time between skins and must to allow more coloured, aromatic and tannic substances to be extracted and to ensure the wine is well structured for ageing. The skins are then separated from the must. It is rinsed with wine in stainless steel containers to complete the fermentation process.

Maturation and ageing:
In the last stage of fermentation the wine is separated from the sediment and stored in steel containers for the first year. Subsequently it is aged in oak barrels. Finally it is stabilized, filtered and bottled.

Tasting notes:
Colour: deep ruby red with hints of violet.
Aroma: strong spicy bouquet.
Taste: full-bodied with balanced tannins.

Suggested pairings:
Excellent paired with roast meat, game, spicy dishes and various types of cured meats and salami.

Serve at a temperature of 18-20° C.
