Maturation and ageing:
Late harvest and selection of the first flower must (60% of the overall must), with a temperature-controlled fermentation at 17-18° C in large wooden casks, before being left to rest on the lees for three months. It is then decanted into wooden casks for malolactic fermentation. After 12 months in French oak barrels it is decanted again and allowed to rest for three months before bottling. After six more months of maturation in the bottle, it is finally put on the market. It has a cellaring potential of at least 8 years.

Tasting notes:
Colour: intense straw-yellow.
Aroma: dry, ripe fruit, ranging from almonds, hazelnuts and dried plums to fig.
Taste: pleasantly full flavours such as quince, chestnut honey and ripe medlar. An agreeable acidity completes the fullness of the flavour.

Suggested pairings:
Perfect with ripe goat's or sheep's cheeses, pastries and even spicy foods, or simply alone as a meditation wine.

Serve at a temperature of 13-15° C
